Repeat Observed mops being stored in the mop sink at the time of inspection. Mops must be hung up to dry properly. Mops dried improperly.

3717-1-03.4(F)(1)(b)/Time/temperature controlled for safety food - cold holding.
Observed three door prep-cooler in the kitchen area not holding at 41 or below. PIC stated all food items were just placed in there an hour ago. Informed PIC to place food items in walk in cooler and make sure they reach 41 degrees within three required time frame and to not use the three door prepcooler until it is consistently holding 41 or below. TCS foods not being cold held at the proper temperature.

PIC throttled the thermostat down so when the cooler is opened repeatedly throughout the day it remains below 41 degrees. Temperature was reading 37 degrees at the time of inspection.
