Corrected During Inspection Did not observe a thermometer in the warming unit. PIC placed an extra thermometer in the unit during the inspection. Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable.

Observed a fan blowing directly on the clean, drying, equipment. Equipment and utensils are not being air dried.

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Observed a torn gasket on the cooler 1 door. Equipment components are not intact, tight or properly adjusted.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Observed a fan in the wash room with build up blowing directly on the clean food cooking equipment. Non-food contact surfaces of equipment are unclean.
