Observed inadaquate amount of freezer space for the amount of frozen product. Iinadequate equipment for cooling, heating or holding food.
To prevent the growth of pathogens, equipment for cooling, heating, or holding cold and hot TCS food shall be sufficient in number and capacity to provide food at the required food temperatures.
3717-1-06.2(D) / Handwashing aids and devices - use restrictions.
Observed soap for handwashing at the utensil washing sink. No handwashing should be completed at the 3-bay sink.
A sink used for food preparation or utensil washing, or a service sink or curbed cleaning facility used for the disposal of mop water or similar wastes, may not be provided with handwashing aids and devices required for a handwashing sink.
