Critical Repeat Corrected During Inspection Observed several food items made on 01/07 ( boiled eggs, lasagna, shredded cheese, cut potatoes) and on 01/08 (cut green pepper, cut onions, cole slaw, lettuce, ham and salami) without date marking. PIC date marked them. Refrigerated, ready-to-eat, TCS foods not properly date marked.

Repeat Observed a container of flour without label. PIC labeled it. Working food containers not properly labeled.

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Repeat Observed damaged gasket on the door of the make table upstair. PIC had a work order in to have someone come and fix it. Equipment components are not intact, tight or properly adjusted.

Repeat Obserbed build up in the microwave and on the shelves of the refrigerator downsatir. Non-food contact surfaces of equipment are unclean.
