VI / Time/Temperature Controlled Safety Food
In both front coolers top holding temps were reading 45 degess while foods on top shelf were reading to temperature
Coolers need to be serviced. All TCS foods being held in refrigeration must be 41 degrees F.

PIC could not display employee health code policy. Employees have a designated place to eat inside the restaurant. All foods purchased from Mcclains. PIC stated they warm soups up to at;east 165 degrees F. All food were not properly date marked. Observed an employee using a electric probe thermometer to check salmon temperatures.
