[?] A summary of the violations found during the inspection are listed below.

3717-1-04.4(A)(1) / Equipment - good repair and proper adjustment.
Equipment and/or components not maintained. The warewashing machine is not working. PIC stated maintenance will be in monday to fix it. PIC stated dishes are done in the meantime using their 2 bay sinks. The facility is following their written procedure on how to use the 2 compartment sink. Dishes are washed and rinsed, then the sink is drained to set up the sanitizer solution before sanitizing the dishes.

No drain plugs in waste receptacle. Did not observe a drain plug at the dumpster.

Facility warewashing is not working and is scheduled to be fixed on Monday 10/22/18. The written procedure of the facility to use the 2 bay sink is not an approved method. Facility has to get a detergent-sanitizer to use with the 2 bay sink.

III - P - Preventing Contamination by Hands: Food employees were not contacting exposed ready-to-eat foods with bare hands.
IV - P - Demonstration of Knowledge: The person in charge is Certified in Food Protection.
VI - P - TCS Food: Observed hot foods being held at 135°F or above; cold foods being held at 41°F or below.
