Complainant called in 01/29 stating getting 2 Taco Salads at this facility on 01/29 at about 3 PM and said the meat did not taste right, tasted like soap. Complainant called back on 01/30 stated getting sick at night from the Taco Salad.
We went to the facility and talked to the manager about the complaint. Manager stated not receiving the complaint or any other complaint. Had manager walk me through their process of making their taco salad. Manger stated the taco salad is made with beans, fired rice, refried beans, shredded lettuce, shredded cheddar cheese and red strips. Beef comes in prepackaged and pre-cooked and is cooked with the bag at about 180F, then transferred into a pan in the heating cabinet and is held at about 170F. Observed beef, rice and refried beans hot holding at 145F or above and the lettuce and cheese cold holding at 41F or below. Manger stated rice nd beans are discarded at the end of the day and the beef is cooled down to 40F in an ice bath. Beef is reheated to 165F or above the next day.
Asked manager about how they clean their dishes, and manger stated they are washed, rinsed, sanitized and air dried. Observed sanitizer at the right concentration.
