Critical Corrected During Inspection Observed stack of clean plates to have debris on them during the time of inspection. Equipment food-contact surfaces or utensils are unclean. PIC removed them for cleaning.

3717-1-04.4(N)(5) / Manual and mechanical warewashing equipment, chemical sanitization (other) - applied according to EPA registered label
Critical Did not observe dish washing machine to reach proper sanitization levels during the time of inspection. Chemical sanitizer other than chlorine, iodine, or a quaternary ammonium applied improperly. PIC made appointment with EcoLab and dishes will be washed in three bay sink until fixed.

Critical Corrected During Inspection Observed chemical container to not have common name on working bottle. Working containers of poisonous or toxic materials not properly labeled. PIC placed label on it.

3717-1-03.2(D) / Food storage containers - identified with common name of food.
Observed granulated powder containers for have common name on container during the time of inspection. Working food containers not properly labeled.

3717-1-04.8(E)(2) / Clean equipment and utensils stored in a self-draining position and covered or inverted.
Corrected During Inspection Observed plates and silverware to not be stored in a covered or inverted position during the time of inspection. Clean equipment and utensils not stored in a self-draining position and covered or inverted. PIC inverted silverware and discussed the idea of designating a top plate to their plate stacks, as they are difficult to invert given the nature of their shape.

Observed clean food containers to be wet nesting during the time of inspection. Equipment and utensils are not being air dried.

3717-1-04.2(I) / Sanitizing solutions - testing devices.
Observed test strips for mechanical warewashing machine to be expired during the time of inspection. No sanitizer test kit available.

3717-1-06.4(F) / Drying mops.
Observed mop to be stored in mop bucket during the time of inspection. Mops dried improperly.
