Critical Corrected During Inspection Observed meatball made on 12/5 without date marking in the pizza make table. PIC dated it to be used by the end of the day. Ready-to-eat, TCS food not properly discarded when required.

3717-1-07(B) / Poisonous or toxic materials: Working containers - common name.
Critical Corrected During Inspection Observed a spray bottle of soap in the itchen and 2 spray bottles of degreaser by the warewash area without label. PIC labeled them. Working containers of poisonous or toxic materials not properly labeled.

3717-1-04.2(G)(1) / Food temperature measuring devices - availability
Observed the themometer in the pizza make table not working. Talked to PIC about putting another one in there. Food thermometer not readily accessible.

3717-1-04.2(I) / Sanitizing solutions - testing devices.
Repeat Observed no sanitizer test kit available.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Observed build up and debris on the shelves, bottom, vent covers and gasket of the pizza make table. Observed the floor of the walk in cooler needing cleaning. Non-food contact surfaces of equipment are unclean.

3717-1-06.4(D) / Cleaning ventilation systems, nuisance and discharge prohibition.
Repeat Observed slight dust build up on the vent covers in the dry storage. Observed build up on the pizza hood. Ventilation system not maintained.
