3717-1-02.4(A)(2) / Person in charge: assignment of responsibility.
Observed person in charge did not have a ODH certificate available.Facility did not have one employee with supervisory and management responsibility and the authority to direct and control food preparation and service with level two certification in food protection.
At least one employee that has supervisory and management responsibility and the authority to direct and control food preparation and service shall obtain the level two certification in food protection according to rule 3701-21-25 of the Administrative Code.
3717-1-04.1(Y) / Temperature measuring devices.
Corrected During Inspection Observed a thermometer in the cooling unit that does not have a temperature read out.Cold or hot holding equipment did not contain a thermometer, or the thermometer was not correctly placed.
A properly designed temperature measuring device as specified in this rule shall be located in the warmest part of a cooling unit or the coolest part of a food warming unit.
3717-1-04.8(A) / Equipment and utensils - air-drying required.
Corrected During Inspection Observed a cloth being used under wet euipment items. Equipment and utensils are not being air dried.
After cleaning and sanitizing, equipment and utensils shall be air-dried or used after adequate draining before contact with food and utensils, and may not be cloth dried.
