Critical Corrected During Inspection Observed the bulk ice machine to have build up. PIC cleaned the ice machine during the inspection. Equipment food-contact surfaces or utensils are unclean.

Corrected During Inspection Observed a chipped knife at the time of inspection. PIC disgarded knife on site. Non-durable equipment observed.

Corrected During Inspection Observed the microwave to have build up on the inside at the time of inspection. PIC cleaned microwave on site during inspection. Non-food contact surfaces of equipment are unclean.

Corrected During Inspection Observed mops being stored in the mop sink to dry. PIC hung mops. Mops dried improperly.

Observed an oven in the back of the kitchen that is not being used. Unnecessary or nonfunctional items and /or litter on premises.

3717-1-04.1(J) / Ventilation hood systems - filters.
Observed the underside of the hood system on the grill line to have build up and debris. Filters or grease extracting equipment not designed to be cleaned/replaced.

Comments
We received a complaint regarding the cleanliness of the facility. The complaint stated there were children in the kitchen area running around, there were employees that did not have their hair restrained, employees not wearing gloves or washing his hands. Upon inspection of the facility, I informed the manager of the complaint and re educated on the importance of hand washing and donning hair restraints.

I - P - Employee Health: The operation had an employee health policy on file.
IV - P - Demonstration of Knowledge: The person in charge is Certified in Food Protection.
III - P - Preventing Contamination by Hands: Observed food employee changing gloves when required.
