Critical Corrected During Inspection Observed incorrect chlorine levels dispensed during mechanical dishwashing cycles. PIC will use manual warewashing procedures until dishwasher has been repaired. Chlorine sanitizing solution at incorrect temperature and/or concentration.

Critical Corrected During Inspection Observed some refrigerated items outside proper cold holding temperature. PIC disposed of affected food accordingly and had Maintenance repair the refrigerator at the time of inspection. TCS foods not being cold held at the proper temperature.
