Critical Corrected During Inspection Observed slight build up on the ice machine. PIC had it cleaned. Equipment food-contact surfaces or utensils are unclean.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Observed french toast, french toast mix and corn beef made on 12/9 in the cooler without date marking. PIC date marked them. Refrigerated, ready-to-eat, TCS foods not properly date marked.

3717-1-03.4(H)(1) / Ready-to-eat, time/temperature controlled for safety food - disposition.
Critical Corrected During Inspection Observed 2 containers of sliced cheese that were supposed to be discarded on 12/8 in the cooler. PIC discarded them. Ready-to-eat, TCS food not properly discarded when required.

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Observed water on the floor by the ice machine. PIC is unsure if it is the ice machine leaking. PIC stated a work order will be put in to have it checked. Equipment components are not intact, tight or properly adjusted.

3717-1-06.4(F) / Drying mops.
Corrected During Inspection Observed mop stored wet in bucket and not hanging to dry properly. PIC hanged it to dry. Mops dried improperly.
