Note: Hobart dishwasher not being used/not operational at time of inspection. Wires shorted out Sept 26th, in process of being repaired (Hobart repairman coming out today). Operators using a modified 3 comp sink set up in the meantime. Chlorine bleach used, verified that sanitizer strength is 50-100ppm chlorine. Operator using disposable trays/utensils at time of inspection. Very good date marking practices observed. Good cooking/cold storage temps observed. No violations at time of inspection. |
