3717-1-04.4(N)(3) / Manual and mechanical warewashing equipment, chemical sanitization (quaternary ammonium) - temp., pH, concentration, and hardness
Critical Corrected During Inspection A quaternary ammonium sanitizing solution did not meet the minimum requirements for concentration. Employee emptied and ran new batch, tested at 400ppm. Resanitized dishes. Person in charge to emphasize with dishwashers to make sure checking and changing sanitizer solution often.
To prevent pathogen growth, a quaternary ammonium sanitizing solution shall: (a) Have a minimum temperature of 75F,(b) Have a concentration as specified and as indicated by the manufacturer's use directions included in the labeling, (c) Be used only in water with 500 ppm (mg/l) hardness or less, or used in water having a hardness no greater than specified by the manufacturer's label.
3717-1-04.4(L) / Mechanical warewashing equipment - hot water sanitization temperature
Critical Repeat Corrected During Inspection The rinse temperature in a mechanical warewashing operation is not adequate to sanitize dishes and utensils. The person in charge stated the workers were not to be using this dishwasher, however it was being used. Person in charge had the dishes rewashed using the 3 compartment sink.
To prevent pathogen growth: in a mechanical operation, the temperature of the fresh hot water sanitizing rinse as it enters the manifold may not be more than 194°F, or less than: For a stationary rack, single temperature machine, 165°F; or for all other machines, 180°F.

3717-1-04.4(A)(1) / Equipment - good repair and proper adjustment.
Repeat Equipment and/or components are not maintained in good working order. The automatic dishwasher is not obtaining the required temperature for sanitizing. Due to the continued use, the dishwasher must be fixed or removed from the facility within the next 2 weeks. In the meantime, the automatic dishwasher must not be used. Place a sign and fix so that cant be used.
Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code.

Repeat Equipment and/or components are not maintained in good working order. Garbage disposal not working, drain backs up and overflows onto the floor.
Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code.
