Critical Corrected During Inspection PIC was unable to answer questions in relation to daily tasks. Called general manager to come assist. PIC unable to demonstrate knowledge by having no critical violations.

Critical Corrected During Inspection Employee and manager were unable to explain proper way to clean and sanitize dishes. General Manager came on site and explained proper procedure. PIC unable to demonstrate knowledge of cleaning and sanitizing.

Critical Corrected During Inspection Observed raw eggs and bacon stored over ready to eat product in the walk in cooler. PIC moved items to bottom shelf in proper place. Food not properly protected from contamination by separation, packaging, and segregation.

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Observed grill freezer to have torn gaskets. Equipment components are not intact, tight or properly adjusted.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Observed multiple gaskets that needed cleaned, ice build up on the grill freezer, and dirty drawers needing cleaned. Non-food contact surfaces of equipment are unclean.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Facility not maintained clean.

3717-1-06.4(F) / Drying mops.
Repeat Corrected During Inspection Observed mops being stored in buckets. PIC hung mops to dry. Mops dried improperly.
