3717-1-02.4(C)(8) / Person in charge: duties - ensure employees are rapidly cooling TCS foods.
Critical Corrected During Inspection The PIC stated their cooling process is breaking down the food and placing it in the cooler without temperature verification. The person in charge did not ensure that employees are using proper methods to rapidly cool TCS foods.
To prevent the growth of pathogens, the person in charge shall ensure that employees are using proper methods to rapidly cool TCS foods that are not held hot or are not for consumption within four hours. Correct By: 14-May-2018

3717-1-04(A) / Multiuse utensils and food contact surfaces - material characteristics.
Observed a styrofoam cup being used as a scoop in the sugar. This is not an approved scoop. Equipment and/or utensils contain improper materials.
To prevent contamination, materials that are used in the construction of utensils and food contact surfaces may not allow the migration of deleterious substances or impart colors, odors, or tastes to food and under normal use conditions shall be: Safe; durable, corrosion-resistant, and nonabsorbent; Sufficient in weight and thickness to withstand repeated warewashing; finished to have a smooth, easily cleanable surface; and resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition.
3717-1-06(A)(1) / Indoor areas - surface characteristics
Observed acoustical ceiling tiles are being used in the kitchen area. This is not an approved ceiling material. Observed floors, walls, and/or ceilings that were not constructed of approved materials.
Where FSO or RFE activities are conducted, materials for indoor floor, wall, and ceiling surfaces shall be smooth, durable, and easily cleanable; closely woven and easily cleanable carpet for carpeted areas; and nonabsorbent for areas subject to moisture.
3717-1-06.4(A) / Repairing.
Observed wooden storage shelf is pitting and chipping away sealant. This needs painted, sealed or removed. Observed various small holes above the 3 bay sink and dishwash machine that need plugged or sealed. The physical facilities are not being maintained in good repair.
The physical facilities shall be maintained in good repair.

The PIC stated they are not going to cool for the rest of the school year which is one week. We discussed different cooling methods and verification processes. If you are going to stop cooling, please notify the Health Department to go down a class level.
