Critical Corrected During Inspection Observed bacon in cooler being stored over ready-to-eat food at the time of inspection. PIC fixed this by moving bacon to the bottom shelf. Food not properly protected from contamination by separation, packaging, and segregation.

Critical Observed pancake machine to have excessive build-up within the machine at the time of inspection. Equipment food-contact surfaces or utensils are unclean.

Critical Repeat Corrected During Inspection Observed sausage gravy without a date mark at the time of inspection. Refrigerated, ready-to-eat, TCS foods not properly date marked. PIC placed date on product.

Repeat Did not observe ODH certificate for PIC. Facility does not have an employee with manager certification in food protection.

Observed no thermometer in the dairy cooler at the time of inspection. Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable.
