Critical Corrected During Inspection Observed orange juice in stand-up cooler that was past its sell-by date during the time of inspection. Ready-to-eat, TCS food not properly discarded when required. PIC immediately disposed of it.

Corrected During Inspection Did not observe a thermometer in the hot holding unit during the time of inspection. Food thermometer not readily accessible. PIC immediately placed thermometer in the hot holding unit.
