Critical Corrected During Inspection Observed a food employee washing dishes improperly in a utility sink instead of the kitchen 3-bay sink. The sanitizing step was being skipped. Food employee and PIC were reminded of the warewashing requirements and told to use the 3-bay sink for washing, rinsing, and sanitizing. PIC not ensuring employees are properly washing or sanitizing equipment and utensils.
