Critical Corrected During Inspection Employee stated the tongs used to remove food from hot holding were only cleaned once a day during the time of inspection. Food equipment surfaces not cleaned at required frequency. Spoke with PIC and employee that the proper cleaning frequency for food-contact utensils is every 4 hours.
