Critical Corrected During Inspection PIC was unable to explain the proper temperature and time requirements for the cooling process at the time of inspection. We reminded the PIC of the process. PIC unable to demonstrate knowledge of temperatures and times for safe refrigerated food storage, hot holding, cooling and reheating.
