Critical Corrected During Inspection Equipment food-contact surfaces or utensils are unclean. Observed debris on a clean scoop and build up on the knives holder. PIC took them to be recleaned.

Food thermometer not readily accessible. Did not observe a thermometer inside the big walk in cooler and some reach in coolers in the kitchen.

Repeat Corrected During Inspection Working food containers not properly labeled. Observed salt & pepper and fish batter that were not labeled. PIC labeled them.

Sanitizer test kit or other device not being used. Observed no test kit or device for testing chemical concentration and/or temperature for the dishwasher.

Non-food contact surfaces of equipment are unclean. Observed food debris at the bottom and on the racks of the Traulsen reach in cooler next to the fryer.
