PIC has employee health code, all breaks are taken in a designated area, observed proper hand washing, PIC is servesafe qualified, proper reheating temperatures were known. Probe thermometer available. I gave the managers a time in lieu both stated nothing is reheated but the bacon is cooker and held at room temperature. They showed me the instructions that will be used for correct cooking and holding times.
