Critical Corrected During Inspection Observed there to be tomatoes being held past their disposition date in the walk-in cooler during the time of inspection. Ready-to-eat, TCS food not properly discarded when required. PIC disposed of them during the time of inspection.

VR 03 / Variance letter on premises
Corrected During Inspection Did not observe variance approval letter on premises during the time of inspection. Variance approval letter not available at time of inspection. Supplied PIC with letter before leaving.

VR 04 / Monitoring procedures being followed
Asked PIC how often non refrigerated surfaces of heat treatment ice cream machine are being cleaned and they said they were cleaned once a day during the time of inspection. Non-refrigerated surfaces on heat treatment ice cream machine, such as dispensing nozzles, should be cleaned every 4 hours as per ODH variance approval letter. Facility not monitoring procedures being followed.

PIC and maintenance person were unable to produce the records for heat treatment on the ice cream machine during the time of inspection. Facility not monitoring procedures being followed.

Corrected During Inspection Observed granulated substances above grill to not have labels on containers during the time of inspection. Working food containers not properly labeled. PIC placed labels on containers.

Repeat Observed dishwashing procedures to be incorrect during the time of inspection. Dishes should be washed, rinsed, then sanitized. Utensils and/or equipment not properly rinsed.

Observed several cracked eggs in the bottom of egg cooler during the time of inspection. Non-food contact surfaces of equipment are unclean.
