Critical Corrected During Inspection Refrigerated, ready-to-eat, TCS foods not properly date marked. Observed shredded cheese that was opened on 7/15 that was not date marked. PIC date marked it.

Corrected During Inspection Food thermometer not readily accessible. Did not observe a thermometer inside the walk in cooler. PIC put one inside.
