VR 05 / Monitoring procedures not being followed
PIC stated that the dispensing nozzles were being cleaned once a day. The variance approval letter states that dispensing nozzles to their ice cream machine should be cleaned at least every 4 hours. Variance procedures approved not being followed during the time of inspection. The facility's monitoring procedures are not being followed according to the HACCP plan or variance approval.
