Received a complaint that the school was serving moldy cheese and the food had white fuzzy spots on it. After an inspection, the facility freezes their block cheese and thaws when they need it. Due to the freezing process, the moisture in the cheese causes white spots (like crystals) to appear. This is not due to temperature abuse. However, at this location, they did not have any cheese on site with the white spots. After speaking with the school food safety manager, we discussed that they were going to forgo freezing the block cheese and just try and cold hold it to see if the crystals appear. There is no violation at the time of inspection.
