Inspection Information

[?] Facility Type: Commercial FSO < 25000 sq. ft.

[?] Inspection Type: Follow-up

Inspection Date: 04-March-2015

The following violation(s) have been corrected since the last inspection.
3717-1-04.2(I)/Sanitizing solutions - testing devices.
Observed there were no proper testing strips for the warewashing machine. The establishment had Quat testing strips and needed chlorine testing strips. To prevent cross contamination proper testing strips shall be available. There is no test kit available for measuring the concentration of the sanitizer.
To ensure proper sanitization, a test kit or other device that accurately measures the concentration in PPM (mg/L) of sanitizing solutions shall be provided.
3717-1-04.4(N)(3)/Manual and mechanical warewashing equipment, using chemical sanitization - temp., pH, concentration, and hardness
Observed the 3 compartment sanitization dispenser was not working properly. To prevent cross contamination the sanitation solution must be a certain ppm. PIC stated will call state industries to fix. A quaternary ammonium sanitizing solution did not meet the minimum requirements for temperature, concentration, and/or water hardness.
To prevent pathogen growth, a quaternary ammonium sanitizing solution shall: (a) Have a minimum temperature of 75F,(b) Have a concentration as specified and as indicated by the manufacturer's use directions included in the labeling, (c) Be used only in water with 500 ppm (mg/l) hardness or less, or used in water having a hardness no greater than specified by the manufacturer's label.
