Critical Corrected During Inspection Improper use of time as a public health control (4 hours). Observed a container of slice tomatoes that was out without an expiration time. PIC stated it was just cut and put an expiration time on it.

3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Unclean nonfood-contact surfaces. Observed accumualtion of food debris underneath the shelves in the walk in freezer. Floor needs to be cleaned frequently.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed food debris inside the microwave in the kitchen.

3717-1-05.4(N) / Covering receptacles.
Repeat Waste receptacles not covered properly. Observed dumpster lids open.
