Critical Corrected During Inspection Observed multiple sani buckets throughout the facility to not be at the required concentration. PIC corrected all buckets. Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness.

3717-1-03.4(D) / Cooling - temperature and time control.
Critical Corrected During Inspection Facility was not properly cooling chili. Temperatures were not taken after placing chili in walk in. Spoke to PIC about taking temperatures for proper cooling. Improper cooling of TCS food.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Observed lettuce that was expired on Tuesday. PIC discarded on site. Refrigerated, ready-to-eat, TCS foods not properly date marked.

3717-1-03.2(M) / Wiping cloths - use limitation.
Observed wiping cloths being stored outside the sanitizer buckets. Improper use and/or maintenance of wiping cloths.

3717-1-04.8(E)(1) / Equipment, utensils, linens - storage.
Corrected During Inspection Observed cups and single use fry containers not stored to prevent contamination. [52] Improper storage of single-service and single-use articles.

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Observed some torn gaskets on the reach in units. Equipment components are not intact, tight or properly adjusted.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Observed multiple gaskets in the facility to have build up and debris. Observed walls and floors to have build up. Non-food contact surfaces of equipment are unclean.

3717-1-06.4(A) / Repairing.
Observed multiple cracked and missing floor tiles throughout the facility. Physical facilities not maintained in good repair.

3717-1-06.1(C) / Floor and wall junctures - coved, and enclosed or sealed.
Observed missing floor coving in the back by the ice cream machine. Floor and wall junctures not properly coved or closed and/or floor drains not provided.
