The following violation(s) have been corrected since the last inspection.
3717-1-03.4(G)/Ready-to-eat, time/temperature controlled for safety food - date marking.
Observed all foods with no date marking. To prevent food borne illness all foods shall be date marked. Foods not used within the 24 hours after opening have to be marked when opened and disgarded within 7 days if not used. PIC stated will start date marking. Refrigerated, ready-to-eat, TCS foods held refrigerated for more than 24 hours were not properly date marked.
To prevent foodborne illness, refrigerated, ready-to-eat, TCS food held at a temperature of 41°F or less for more than 24 hours shall be clearly marked at the time of preparation or the time the original container is opened to indicate the date or day, that is a maximum of seven days, by which the food shall be consumed, sold, or discarded. The day the food is prepared or opened is day one.
3717-1-04.2(B)(2)/Manual warewashing - sink compartment size requirements.
There were no sanitized strips. To prevent cross contamination sanitizer strips are needed.A testing kit that accurately measures the concentration in ppm shall be provided. PIC stated will buy. Sink compartments were too small to accommodate the largest piece of equipment.
To ensure proper cleaning and sanitization, sink compartments shall be large enough to accommodate the largest equipment and utensils. If equipment or utensils are too large for the warewashing sink, a warewashing machine or approved alternative shall be used.
3717-1-04.4(A)(1)/Equipment - good repair and proper adjustment.
The reach in cooler had water build up on the bottom shelf. Equipment and/or components are not maintained in good working order. PIC stated will have repair man come look at.
Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code.
