3717-1-04.5(B)(1) / Equipment food-contact surfaces and utensils - cleaning frequency.
Critical Corrected During Inspection When asked employee at the deli how often the slicer is cleaned, employee stated at the end of the day (deli is open for 12 hours). Reviewed with PIC and employee that the slicer has to be taken apart and wash, rinse and sanitized every 4 hours. Food equipment surfaces not cleaned at required frequency.

3717-1-07(B) / Poisonous or toxic materials: Working containers - common name.
Critical Corrected During Inspection Observed a spray bottle of water without label at the deli. PIC had an employee labeled it. Working containers of poisonous or toxic materials not properly labeled.

3717-1-05.1(C)(1) / Handwashing sink - required water temperature
Observed one of the handwashing sink water below 100°F at the deli.

3717-1-04.1(Y) / Temperature measuring devices.
Did not obersved a thermometer or observed non working thermometer in the deli hot holding cases, in the deli cold holding case and walk in cooler, in some of the produce and bakery cold holding cases. PIC made a note to put thermometers in these hot and cold holding units. Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable.

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Repeat Observed excessive ice build up in the dairy walk in freezer. The freezer has leaking pipe and big chunks of ice on the walls and ceiling. Observed ice build up by the door of the seafood walk in freezer. Equipment components are not intact, tight or properly adjusted.

3717-1-04.2(I) / Sanitizing solutions - testing devices.
Observed water damaged test kit at the deli and no test kit at the produce. No sanitizer test kit available.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Observed dust build up on the fan covers of the deli hot cases. Observed dust build up on the fan covers of the produce walk in cooler. Observed slight dust build up on the fan covers and ceiling of the deli walk in cooler. Non-food contact surfaces of equipment are unclean.
