Repeat The vents above the prep table in the bakery are soiled. The fan vents in the meat walk-in cooler are soiled. Observed a build-up of dirt and debris.

The Deli cheeses were not properly datemarked. Dates observed were 12/30/13 and 12/25/13. An employee said they date mark meats by 7 days and cheese by 21 days. Refrigerated, ready-to-eat, TCS foods held refrigerated for more than 24 hours were not properly date marked.
Refrigerated, ready-to-eat, TCS food held refrigerated for more than 24 hours shall be clearly marked at the time of preparation or the time the original container is opened to indicate the date or day to be consumed, sold, or discarded as required in this rule. Correct By: 13-Dec-2013
