Comments
Received a complaint stating that school lunches, specifically a pizza, was served nearly frozen. Complainant stated that cold food had been served up to five times with no corrective action. Upon arriving, I spoke to the PIC in the kitchen and they explained to me their process of receiving food from Buckeye Community School, which is another licensed kitchen. The food temperatures are recorded once cooked and before delivered to Marion Prep. Food temperatures are then recorded once received by Marion Prep and once again in the hot holding units. PIC also records temperatures of leftovers as well. PIC displayed records as proof during the time of inspection. PIC did state that there were 3 instances so far this year that food in the kitchen had ran out and more food had to be rushed over from Buckeye Community school. In my professional opinion I believe that a rushed situation such as this has a greater potential to produce food that is not at temperature, but I can not say for sure being that I was not present the day this situation happened. I asked the PIC how they plan to fix this issue, and they stated that they had already fixed this issue by requesting more meals from Buckeye Community School. Specifically, Buckeye Community School now brings over 20 more meals than they use to. PIC stated that since this alteration they have not ran out of food. Did not observe any violations during the time of inspection.
