Note: Responding to inmate complaint from letter dated 6-30-14. Complaint was that he received cold food on a tray served in the cafeteria (breakfast). Inspector followed up during lunch time. observed inmates being served. The internal temperatures of the hot foods (black beans & soy giuseppe) ranged from 162 - 168 degrees F. These items were dispensed onto individual trays, and given to inmates within 10-15 seconds of being dispensed. No trays were observed being kept/stored on the "lower counter." PIC stated that the policy that is strictly followed, is that no trays that are to be served are ever kept in/under the counter. -No violations observed. |
