Critical Corrected During Inspection Observed build-up of debris on ice shoot at the self-dispensing soda machine at time of inspection. PIC placed soda machine out of order during the inspection for cleaning of the ice shoot. Equipment food-contact surfaces or utensils are unclean.

Critical Corrected During Inspection Observed heated pizza and sandwiches not held at proper holding temperature at time of inspection. PIC disposed of food that was outside of temperature and also adjusted the temperature setting on the warming unit during the inspection. TCS foods not being hot held at the proper temperature.

Corrected During Inspection Observed dumpster lids open at time of inspection. Waste receptacles not covered properly.

Comments
Received a complaint in regards to the single slice pizza. Complaint stated complainant purchased a slice of pizza at 8:30am and the pizza was not cooked properly. The crust was still undercooked. Upon inspection of the facility, the pizza is stored frozen, cooked in a pizza oven before placing in individual containers and placed in the warming unit. During the inspection, the pizza was observed to be cooked properly with an internal temperature of 200F. The pizza was then placed in single use containers and placed in the warming unit.
