3717-1-02.4(C)(11)/Person in charge: duties - ensure employees are not contacting food w/ bare hands
The person in charge did not ensure that employees were not contacting ready to eat foods with their bare hands.
To prevent contamination, the person in charge shall ensure that employees are preventing cross-contamination of ready-to-eat food by properly using utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment.
3717-1-02.4(C)(6)/Person in charge: duties - ensure employees are properly cooking TCS foods.
The person in charge did not ensure that employees are properly cooking TCS foods and/or using thermometers as required.
To prevent the growth of pathogens, the person in charge shall ensure that employees are properly cooking TCS food, through daily monitoring of cooking temperatures using appropriate calibrated temperature measuring devices.
3717-1-03.4(F)(1)/Time/temperature controlled for safety food - hot and cold holding.
TCS foods were not being held at the proper temperature. Refrigerator ambient air temp at 46 degrees F.
To prevent the growth of pathogens, except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food shall be held at 135°F or above (except that roasts cooked using time and temperature parameters in 3717-1-03.3 may be held at 130° F), or at 41°F or less.
3717-1-04.1(K)/Food temperature measuring devices - accuracy.
Food thermometers are not accurate to plus or minus one degree C, or plus or minus two degrees F in the intended range of use.
To prevent foodborne illness, food temperature measuring devices that are scaled only in Celsius or dually scaled in Fahrenheit and Celsius shall be accurate to plus or minus one degree Celsius in the intended range of use; Food temperature measuring devices that are scaled only in Fahrenheit shall be accurate to plus or minus two degrees Faranheit in the intended range of use.
3717-1-06.4(B)/Cleaning - frequency and restrictions.
Observed a build-up of dust on the wall behind the ice machine.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed.
