Critical Corrected During Inspection Observed improper bare-hand contact with RTE foods. Reviewed no bare hand contact with RTE with PIC.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Corrected During Inspection Observed open bag of lettuce and cabbage on 12/27 without date marking. PIC dated it. Refrigerated, ready-to-eat, TCS foods not properly date marked.

3717-1-06.2(C) / Handwashing sinks - hand drying provision.
Observed no paper towel at the hand sink in the kitchen. No towels or drying device at the handwashing sink(s).

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Observed the make table in the kitchen not working properly. No food item was stored in there. Talked to PIC about having maintenance come and fix it. No food shall be stored in cooler until fixed. Equipment components are not intact, tight or properly adjusted.
