3717-1-02.2(C) / Hands and arms: when to wash
Critical Employee was observed wearing gloves and getting a wiping cloth from the 3 bay sink, wiping counter, then handling ready to eat meat with the same gloves on. Food employee(s) did not wash hands in situations that specifically require them to do so.
To prevent contamination, food employees shall clean their hands and exposed portions of their arms after switching between working with raw food and with ready to eat food; before donning gloves for working with food; and after other activities that contaminate the hands. Correct By: 18-Dec-2013
3717-1-02.4(C)(9) / Person in charge: duties - ensure employees are properly sanitizing equipment and utensils
Critical Corrected During Inspection The Meat Dept. and Deli Area managers were unaware of proper concentration for sanitizing the tools and equipment. The person in charge did not ensure that employees are properly sanitizing equipment or utensils.
Each manager and I went over proper sanitizing procedures and found the correct information on the wall with which to check with test strips. To prevent contamination, the person in charge shall ensure that employees are properly sanitizing cleaned multiuse equipment and utensils before they are reused. Correct By: 18-Dec-2013

Critical There are 2 out of date baby food items found. 5 Gerber Graduates mixed Berry Dippers dated 10 DEC 2013 1 Earth Best Organic Peach Mango dated 11 DEC 2013 Food in an RFE must be embargoed due to adulteration, misbranding, or baby food or formula is expired.
Whenever a licensor finds or has cause to believe within an RFE or FSO in their jurisdiction that any food is adulterated, or so misbranded as to be dangerous or fraudulent, or that infant formula, or baby food is expired, the licensor shall affix to the item a tag giving notice that the item is, or is suspected of being, adulterated, misbranded, or expired and has been embargoed. There is a sticker degrading on the interior of the ice machine in the Starbucks station that is getting into the ice. Miscellaneous sources of contamination observed.

3717-1-04.1(Y) / Temperature measuring devices.
The Bakery walk-in cooler does not have a thermometer. Cold or hot holding equipment did not contain a thermometer, or the thermometer was not correctly placed.
A properly designed temperature measuring device as specified in this rule shall be located in the warmest part of a cooling unit or the coolest part of a food warming unit.
3717-1-06.4(B) / Cleaning - frequency and restrictions.
The floor of the Bakery is soiled. Observed a build-up of dirt and debris.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed.
