3717-1-05.1(O)(2) / Using a handwashing sink - other uses prohibited.
Critical Observed food debris in the bakery/ deli and produce hand sink. Handwashing sink is being used for purposes other than handwashing.
To prevent contamination, a handwashing sink may not be used for purposes other than handwashing.

3717-1-03.4(A) / Frozen food - temperature and time control.
Bratwrust in frozen storage exhibit signs of thawing.
Stored frozen foods shall be maintained frozen.
3717-1-03.5(A) / Standards of identity
Repeat Observed ham labels in the deli without the full name of the product. Private Selection Brown Sugar Ham with natural juices, Eckrich Virgina Brand with water added, Eckrich Cured Ham water added. Food product labels are not in compliance with standards of identity requirements.
Packaged food shall comply with standard of identity requirements in 21 C.F.R. 131-169 and 9 C.F.R. 319, and the general requirements in 21 C.F.R. 130.
3717-1-04.1(KK) / Food equipment - certification and classification.
Observed a non-commercial microwave in the bakery. Equipment is not approved by a recognized testing agency.
Food equipment that is acceptable for use in a FSO or RFE shall be approved by a recognized food equipment testing agency.
3717-1-04.4(A)(1) / Equipment - good repair and proper adjustment.
Observed both of the band saw's doors with a crack. These doors can no longer be properly sanitized. Equipment and/or components are not maintained in good working order.
Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code.
3717-1-04.4(A)(1) / Equipment - good repair and proper adjustment.
Observed the freezer case holding bratwrusts not properly keeping the food frozen. Equipment and/or components are not maintained in good working order.
Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code.
3717-1-05.1(I) / Service sink - number.
Corrected During Inspection Observed damaged goods being stored in the mop sink. Employee's cleaned the sink out.
At least one service sink or one curbed cleaning facility equipped with a floor drain shall be provided and conveniently located as specified in this rule.
