Critical Corrected During Inspection Observed the spray bottle used to sanitize the food-contact surface of the prep table with a quat sanitizer concentration that was above the approved concentration. PIC placed freshly made sanitizer from the 3-bay sink in a sanitizer bucket during the inspection to be used to clean the prep table. Unapproved chemical sanitizer used on food contact surfaces.

Corrected During Inspection Observed frozen chicken being thawed improperly at room temperature. PIC was educated on thawing requirements during the inspection and placed the chicken under cold running water to continue thawing. TCS foods not properly thawed.
