Repeat Observed clean food containers to be wet nesting during the time of inspection. Equipment and utensils are not being air dried.

3717-1-06.4(F) / Drying mops.
Repeat Observed mop to be stored in mop bucket during the time of inspection. Mops dried improperly.

3717-1-04.4(N)(5)/Manual and mechanical warewashing equipment, chemical sanitization (other) - applied according to EPA registered label
Did not observe dish washing machine to reach proper sanitization levels during the time of inspection. Chemical sanitizer other than chlorine, iodine, or a quaternary ammonium applied improperly. PIC made appointment with EcoLab and dishes will be washed in three bay sink until fixed.
