3717-1-02.4(C)(10) / Person in charge: duties - ensure employees are properly sanitizing equipment and utensils
Critical The person in charge did not ensure that employees are properly sanitizing equipment or utensils because test strips were not available in the deli and produce.
To prevent contamination, the person in charge shall ensure that employees are properly sanitizing cleaned multiuse equipment and utensils before they are reused.
3717-1-03.6(A) / Discarding/reconditioning unsafe, adulterated, or not honestly presented food
Critical Corrected During Inspection Observed a can of Kroger sliced pears with a dent on the rim of the can. The person-in-charge removed it from the shelf. Unsafe food was not discarded or properly reconditioned.
To prevent the transmission of foodborne illness, a food that is unsafe, adulterated, or not honestly presented as specified under 3717-1-03 of this code shall be discarded or reconditioned according to an approved procedure.
3717-1-04.5(B) / Equipment food-contact surfaces and utensils - cleaning frequency.
Critical Corrected During Inspection Observed build-up on the water sprayers in the produce self service area. Person-in-charge had an employee clean and sanitize the sprayers.
Equipment food-contact surfaces and utensils shall be cleaned at a frequency specified in this rule.
3717-1-05.1(O)(2) / Using a handwashing sink - other uses prohibited.
Critical Observed the handwashing sink in Starbucks with coffee beans inside. Handwashing sink is being used for purposes other than handwashing.
To prevent contamination, a handwashing sink may not be used for purposes other than handwashing.
3717-1-08.3(H) / Special requirements: bulk water machine criteria - Sampling
Critical Water dispensed from bulk water machine has not been sampled at the required frequency, and/or sample results were not retained at the facility. Sample results were not available at the time of the inspection. Results should be faxed to Ryan Allarding at 740-383-2251.
To prevent illness, the water dispensed from bulk water machines shall be sampled at least semi-annually for coliform bacteria. Sample results shall be retained at the FSO or RFE for review by the licensor.

Repeat There is no test kit available for measuring the concentration of the sanitizer in the deli (water damaged) and produce.
To ensure proper sanitization, a test kit or other device that accurately measures the concentration in PPM (mg/L) of sanitizing solutions shall be provided.

The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed.
3717-1-06.4(D) / Cleaning ventilation systems, nuisance and discharge prohibition.
Observed vents with visible build-up in the facility.
Intake and exhaust air ducts shall be cleaned and filters changed so they are not a source of contamination. If vented to the outside, ventilation systems may not create a public health hazard or nuisance or unlawful discharge.
