Critical Corrected During Inspection Ready-to-eat, TCS food not properly discarded when required. Observed cheese that was date marked to be discarded on 9/24 in the walk in cooler. PIC voluntarly disposed of it.

Food thermometer not readily accessible. Did not observe a thermometer inside the walk in cooler.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed build up on the vent fan of the walk in cooler.
