Critical The test kit used for measuring the concentration of the sanitizer did not have instructions for use (how long to keep the strip submerged in the sanitizer to get a reading).
To ensure proper sanitization, a test kit or other device that accurately measures the concentration in PPM (mg/L) of sanitizing solutions shall be provided.
3717-1-03.2(M) / Wiping cloths - use limitation.
Observed improper use and/or maintenance of wiping cloths. There was a wiping cloth that was previously used, but not stored in sanitizer solution after use.
Cloths in use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer. Also remember that cloths used with raw animal foods shall be kept separate from other cloths.
