Complainant stated deli employees at this facility break the cold chain while making food, food sit in the hot case for longer than it should be, food contact surfaces are unclean and do not get cleaned until Ecolab comes, fats/grease/oil are dumped down the drain every night when cleaning the rotisserie causing a lot of build up around the drain that the cover does not sit properly and there are unsanitary practices at the deli.

Talked to the manager about the complaint. Manager stated food items in hot case are kept there for 2h-4h depending on the item, are discarded after the time limit and they record the time and temperature on a log. Observed time and temperature logs from today at the time of inspection. Temperature logs for previous days were observed but time logs were not available at the time of inspection. Observed food items in hot cases hot holding at 135F or above. Did not observe employees breaking the cold chain while making food at the time of inspection.
Did not observe food contact surfaces unclean at the time of inspection. Manager stated food contact surfaces are cleaned every 4 hours and cooking equipment are cleaned once a day and deep cleaned once a week.
Manager stated fats/grease/oil are dumped nightly in their grease trap. Did not observe grease in drain and cover not closing properly at the time of inspection. Manager sated they broke a cleaning brush into the drain by rotisserie few days ago and it got clogged. Emergency service came and fixed it. Manager showed the work order he put in and the completion of service from the emergency service for the drain at the time of inspection. Observed no build up around the drain. Manager stated they used to have a log where employees sing off after disposing of the grease in the grease trap daily but they no longer have it.
Did not observe unsanitary practices at the deli at the time of inspection.

Did not observed complainant statement at the time of inspection. Talked to and recommended to the manager about having logs for time and temperature for cold and hot food items and keeping them on file to make sure employees are following proper procedures. Also talked to and recommended to the manager about having a log for grease disposal to make sure employees are properly disposing of their grease. No violation was noted at the time of inspection.
