Critical Food employee(s) were not washing hands in an approved handwashing sink or automatic handwashing facility.
To ensure effective handwashing, food employees shall clean their hands in a handwashing sink or approved automatic handwashing facility and may not clean their hands in a sink used for food prep or warewashing, or in a curbed cleaning facility used for the disposal of mop water and similar liquid waste. The complaint is over not having hot water in the restaurant.

As I was entering the parking lot, I saw a Davey Drain truck leaving the facility. The PIC said he was leaving to go to Columbus to get a part to repair there hot water heater. There was a new unit sitting in the back of the facility. The PIC said the issue should be fixed tonight.

I asked the PIC primarily what did she need water for. She said for washing hands, washing dishes, and for a few produce items.

The PIC said produce is prepped in the morning, therefore they should be ok with vegetables until tomorrow. The facility does not have a separate vegetable prep sink. They use a cleaned and sanitized portion of the 3 compartment sink. No more veggies shall be prepped until the prep bay can be thoroughly washed, rinsed, and sanitized.

The PIC said to "wash" hands, they are currently rinsing them in the sanitize bay of the three compartment sink. This is not an approved way to wash hands. We went over handwashing options. You can wash in cold water and use the hand sanitizer on the wall after washing. Also, since this is an emergency, we went over using approved hand wipes.

Lastly, we discussed washing of dishes. The PIC said they are currently only washing dishes as needed. She explained that they are heating up water in the coffee pot and it is coming out at 200 degrees F. She said they use the hot water in all the bays of a three compartment sink. She also had a probe thermometer to check the temperature for sanitizer activation.

You will be checked tomorrow to make sure the hot water situation is fixed.
