Critical Corrected During Inspection Observed the hand sink in the kitchen blocked with a mop and pizza oven store on it. PIC moved the items to make the hand sink accessible. Handwashing sink not accessible.

3717-1-05.1(O)(2) / Using a handwashing sink - other uses prohibited.
Critical Corrected During Inspection Observed drink with ice being poured in the hand sink at the bar. Tlaked to PIC about not dumping anything in the hand sink and using the hand sink for hand washing only. Handwashing sink is being used for purposes other than handwashing.

3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Corrected During Inspection Observed raw ground beef stored above cooked chicken and meat ball in the walk in cooler. PIC moved it down the shelf below all RTE food. Food not properly protected from contamination by separation, packaging, and segregation.

3717-1-04.4(N)(3) / Manual and mechanical warewashing equipment, chemical sanitization (quaternary ammonium) - temp., pH, concentration, and hardness
Critical Corrected During Inspection Observed low sanitizing concentration at the 3 compartment sink at the bar. PIC added more sanitizer to meet the required concentration. Quaternary ammonium sanitizing solution at incorrect temperature, concentration, and/or water hardness.

Critical Corrected During Inspection Observed cole slaw made on 10/8 still in the walk in cooler. PIC discarded it. Ready-to-eat, TCS food not properly discarded when required.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Repeat Corrected During Inspection Observed cooked spaghetti made on 10/12 without date marking and subs made on 10/13 without date marking. PIC date marked them. Refrigerated, ready-to-eat, TCS foods not properly date marked.

Observed food containers stored on the floor on the walk in cooler. Improper storage of food items.

3717-1-04.1(KK) / Food equipment - certification and classification.
Repeat Observed the use of non-commercial microwaves and rice cookers. Equipment not approved by a recognized testing agency.

3717-1-04.2(I) / Sanitizing solutions - testing devices.
Observed water damaged test kit. No sanitizer test kit available.

Water sample was done on 7/1. No Coliform. Last water sample was done on 10/14. PIC stated they will send results to the Health Department.
Comments related to the Critical Control Point Inspection (Item 35) are listed below. Note: Positive observations are indicated by the element number and the letter P.
III - P - Preventing Contamination by Hands: Food employees were not contacting exposed ready-to-eat foods with bare hands.
III - Preventing Contamination by Hands: The hand washing sink(s) were not accessible for convenient use by employees. Observed hand sink at the kitchen not easily accessible and hand sink at the bar being used for other uses.
VI - TCS Food: Ready-to-eat, TCS food that had been date marked was not properly discarded when required. Observed cole slaw made on 10/8 in the walk in cooler. PIC discarded it.
VI - TCS Food: Refrigerated, ready-to-eat, TCS foods held refrigerated for more than 24 hours were not properly date marked. Observed spaghetti made on 10/12 and subs made on 10/13 without date marking. PIC date marked them.
VII - Protection from Contamination: Equipment food-contact surfaces and utensils were not being sanitized. Observed low sanitizer concentration at the bar. PIC added more sanitizer.
