Critical Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Observed over easy eggs stored on top of RTE eggs and saucage paties in the hot table at the front. PIC separated them.

3717-1-03.4(H)(1) / Ready-to-eat, time/temperature controlled for safety food - disposition.
Critical Corrected During Inspection Ready-to-eat, TCS food not properly discarded when required. Observed 2% reduced milk that expired on 11/19 in the cooler at the front. Also observed mix cabbage that expired on 12/01 in the walk in cooler. PIC discarded them.

Food thermometer not readily accessible. Did not observe a thermometer inside the big walk in cooler.

3717-1-03.2(K) / In-use utensils - between-use storage.
Repeat Corrected During Inspection In-use utensils improperly stored. Observed rice and bread crumb scoops stored with the handle inside the food. PIC stored them properly.

3717-1-04.8(E)(2) / Clean equipment and utensils stored in a self-draining position and covered or inverted.
Observed clean plates at the front that were not covered or inverted to prevent contamination. Clean equipment and utensils not stored in a self-draining position and covered or inverted.

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Repeat Equipment components are not intact, tight or properly adjusted. Observed condensation on the ceiling of the walk in freezer. Also observed a torn gasket on the milk cooler at the front.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed debris in gaskets and bottom of both make tables at the front.

3717-1-06.4(D) / Cleaning ventilation systems, nuisance and discharge prohibition.
Ventilation system not maintained. Observed dusty vents cover in the kitchen.
